Good morning everyone! I hope you all have had a great week. It has been nice to have a slow one after all of our Thanksgiving festivities. Even though we kept it very small this year, there was plenty of cooking to do and cleaning. We spent the week getting back into our routines and finishing our leftovers. Pie for breakfast? Yes please.

Good morning friends! I hope you are having a great week. We kicked off December with decorating a gingerbread house and an evening walk to look at all the holiday lights. So far, we’ve spotted a baby yoda holding a candy cane, Christmas dragons, and a snoopy-themed house! Before I dive into some planned holiday content, I wanted to recap our September trip to Pinetop-Lakeside, Arizona. It was the perfect escape from the hot summer temps in Tucson. I loved being amongst the pine trees and lakes. It reminded me of being back in the Pacific Northwest.

This oatmeal bake is a staple in our house during the colder months. I am not a fan of texture in regular oatmeal but love the texture of baked oatmeal. I love the tartness of green apples paired with the sweet notes of cinnamon and brown sugar. I hope you love it as much as we do!

This is becoming one of our regular meals. You can have it on your table within 30 minutes which is perfect for those busy night. The longest part is waiting for the pasta water to boil. We love using chick pea pasta as it has a lot of protein. With a green salad and slice (or two!) of crusty bread, I believe this meal will quickly become one of your favorites too!
